Coco Ginger snap cookies with a Matcha Buttercream Filling

   Matcha is a green tea that has been grinded into a fine powder so you don’t need a tea bag or strainer. You can just whisk it into a paste as you slowly add more hot water. It is chalk full of health benefits and has an earthy flavor. I try to have three or four cups a week if I can. That being said, I will consume anything with matcha, whether it’s in liquid or a solid form. So, what could be better than a fresh, warm, and gooey ginger snap cookie filled with matcha tea goodness? Nothing, I tell ya!

     I will say right up front this is not my recipe (I wish I came up with it). I found it on Instagram by a food blogger named Kristie who owns the site Sweet and Simple Kitchen (is that a cute name or what!?). The picture had me salivating (in a more dignified way… okay that’s a lie; I had no dignity) and I knew I had to make it the same day I discovered it. When you take the first bite, I can promise you that your eyes will roll back while your taste buds dance for joy as you let that sigh of pleasure go. It’s a guarantee fix! I have made a batch twice in one week. The first time was right after the election because I needed something sweet to eat and hand out to those who needed it. The second time was for a ladies’ pot luck. These cookies won’t last twenty-four hours when you make them. More than one source reported back that sharing my cookies has been hard and almost regretful; they all wanted to eat them for themselves (BOOM! Mic drop!). These are meant to be shared with your loved ones (hide a stash for yourself, trust me). While they are rich in flavor, they are incredibly easy to make. Send me pictures of your finished product. And those who live nearby, save one for me!

Coco Ginger snap cookies with a Matcha Buttercream Filling
Cocoa Ginger Cookies
3/4 cup butter, softened
1/2 cup granulated sugar
1/2 cup dark brown sugar
1/4 cup molasses
1 egg
2 tsp vanilla
2 cups all purpose flour
2 tbsp cocoa powder
2 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
1/8 tsp cloves
1/2 cup granulated sugar (for rolling)
Matcha Buttercream
3/4 cup butter, softened
2 1/2 cups icing sugar
2 tsp vanilla
1 tbsp matcha powder
